This morning, we visited Hillsboro Creamery, owned by Jill and Tim Ulrici. Jill shared their story and gave the team valuable insight. When the building's previous owners were looking to sell, Jill and Tim saw an opportunity to buy it, keep an ice cream shop in town, and give it a fresh start as a from scratch creamery focused on clean ingredients.
To learn the craft, they attended Scoop School, a three day program in Missouri dedicated to ice cream making. One year in, they are still developing the business and adapting to each season with new flavors, special items, promotions - since offering something new is a big driver of sales. The team also heard about the tradeoff between using higher quality ingredients and managing costs, along with how closely the owners listen to customer requests on flavors and sizes.
The visit wrapped up with a look at the equipment and systems behind the scenes, and delicious ice cream for breakfast!
